There is the Twilight Cultural Tour, which is excellent. They take you to a "marae" and village complex somewhere 15 km from Rotorua and on the way there they introduce you to the traditional protocol that is to be followed when visiting a "marae". Their price is 85 NZ$ and you can find out more on www.maoriculture.co.nz.
